I recently finished Shannon’s course on French Cooking, and it was a pure delight! From the early lessons on stocking kitchen tools and pantry, which I found incredibly useful and returned to over and over again as I got further in the course, to the detailed sections on the various food categories, I found the instruction to be easy to follow and joyfully presented. 


The focus on seasonal cooking helped make preparing meals a mindful endeavor, and the array of little tips peppered throughout the videos are nuggets of pure gold. Seeing clearly how to do things and having steps explicitly explained are particularly valuable. 


Perhaps the biggest surprise is the overall approach of simplicity, which has made aspects of cooking I previously found intimidating feel entirely doable. I highly recommend this course to anyone who already enjoys cooking, and also to those who would like to find a bit more joy in the kitchen. Shannon teaches us how to add French cooking to our daily lives and how to add flavor, and hence more pleasure, to our meals in the process.

Hi Shannon!  Thank you for the lovely “Market, to Market” notepad.  It is so very thoughtful of you to acknowledge my completion of the French cooking course.  It was such a fun course.  I’ve made several of the recipes presented.  My favorite is the bolognese recipe.  It was extraordinary!!

My first recipe I tried from the course was a big success! I made homemade beef stock the day before and then followed Shannon’s recipe for onion soup. Perfectly delicious a fall meal!

Shannon, I just wanted to let you know how much I have been enjoying your Introduction to French Cooking class! It is so well put together. I believe you have thought of everything! I am about 40% complete and have enjoyed each chapter. Tonight I put on some French music, poured a glass of rosé and made the Soufflé au Fromage ave Herbes! Not only was it delicious, but it was fun. Thank you for the effort you have put into making this class extraordinary.

Hi Shannon!  I’m really enjoying the French Cooking Class.  I had to put a hold on it for a few months as I was extremely busy with other pressing projects, but I am now back at it!

Thank you again for creating such a wonderful class.  I’m looking forward to trying my hand at crêpes.

FYI- I have made your poached salmon recipe and the white fish recipe with the lemon wine butter sauce numerous times!  We love it.  Another staple is the pureed carrots and sautéed carrots.  Who knew carrots could taste so great.

Your class has also prompted me to shop seasonally at my local farmers market.  I use to go every once and awhile but have been going weekly since I started your class.  What a difference in how a blueberry tastes!

Hi Shannon!
I just started the French cooking course last night, and I really enjoyed the lesson about the tools needed in the kitchen.  I love the way that you presented how to save or invest in certain items! I thought I might pass on this class, being a “mostly vegetarian” who doesn’t eat eggs, but in the end I didn’t want to miss out on what you were sharing!  I’m sure the rest of the course will be excellent.  I feel like I am in your kitchen with you!
