Lemon Basil Zucchini Noodle Salad

  • 3 tablespoons fresh lemon juice 1/2 of a lemon
  • 4 teaspoons extra virgin olive oil
  • 1/4 teaspoon kosher salt
  • black pepper freshly ground
  • 2 large basil leaves finely chopped


  • 1 cup canned chickpeas/garbanzo beans rinsed and drained
  • 1/4 cup red onion sliced in julienned stripes or diced (cook's preference)
  • 1/2 cup grape tomatoes sliced in half
  • 1 cup greens arugula, baby spinach roughly chopped, your choice
  • 2 zucchini spiraled (looking like noodles) cut into the length desired


  • Make the vinaigrette by placing all ingredients, except the olive oil into the bottom of the salad bowl. Whisk together. Add the olive oil, whisking to incorporate and blend.
  • Add all of the salad ingredients on top of the dressing.
  • Toss to dress the ingredients. Serve and enjoy!
  • Optional: To make a complete meal, top with grilled slices of chicken or any other protein.
